It feels like summer is finally here! Obviously this means so many meals prepped on the grill. I've teamed up with Fred Meyer to bring you my favorite grilled artichokes and a recipe for housemade roasted garlic aioli.<br />
<br />
EQUIPMENT:<br />
- Immersion blender<br />
- Tall and narrow jar with an opening wide enough to fit your immersion blender, I used a pint and a half wide mouth mason jar<br />
<br />
INGREDIENTS:<br />
- one large/extra large egg<br />
- 1 cup extra virgin olive oil<br />
- 2 tbsp roasted garlic<br />
- 1 tbsp dijon mustard<br />
- the juice of one lemon<br />
- a generous pinch of salt<br />
<br />
BLEND all ingredients together in your mason jar, where you can then store the remaining aioli, so easy and delicious!<br />

Day 11<br>
Felt so good to sleep, woke up late at <a href="http://www.nirvanakohchang.com">Nirvana</a> and ate one of our better hotel breakfasts. We walked around the Southwest side of the island and all of Lonely Beach, it's very dirty here on Koh Chang and surprisingly expensive for what the island has to offer. Everyone rides scooters which made it very difficult to find a taxi. We saw monkeys running along the power lines and a lot of natives had their dogs sitting on the scooters with them. It's been a little disappointing to see/find out that almost all the beaches are rocky, we'll be heading to the other side of the island tomorrow in hopes of less crowds and garbage. Our hotel offered a car into Bang Bao village from 6-8pm where there are small shops and restaurants on a long pier off the island. 2 hours was not enough time to see it all. Finished with some strawberry and green lemon handmade gelato.<br><br>

Day 12<br>
Woke up to rain for the second day in a row, lounged and watched a movie until check out. The next resort I booked was only a few kilometers away, however there was a small path of water that you are unable to cross by car so we had to drive an hour and a half around the entire island to the other side. In order to get there we had to catch a taxi to the ferry station (at the top of the island) and wait an hour and a half to catch a second taxi back down to the bottom of the Southeast side. We also had no idea that the taxis are separated by sides here, west/east, and the taxi drivers will not drive over the ferry line...the only way to get there in one ride is by an expensive private car. When all was said and done, it took us a total of four hours to get to our next destination. <a href="http://www.themangrovehideaway.com">The Mangrove Hideaway</a> is owned by a hospitable gay French couple and located in Salek Phet, smack dab in the middle of a fishing village. Once settled in, we thought we'd try scooter-riding and the owner was kind enough to lend us his. Unfortunately within the first few feet out of the driveway Jen lost control on some mud/gravel and down we went. Embarrassing is an understatement and though we are all okay (including the bike!) we are a little dinged up; I've been calling the acquired bruises our "Thailand tattoos". Since this side of the island is much more desolate, we hung around the cozy lounge and treated ourselves to our largest dinner, hot pot of tom yum and two delicious fish right from the bay!<br><br>

Day 13<br>
Since the motorbike didn't work out too well, we rented bicycles and seeked out the nearest waterfall: Kiri Phet. The ride was absolutely gorgeous and only a couple miles inland. Once we got to the trail it was about a 15 minute walk up, but this island is not flat, the elevation is 743 meters (2,437 feet) at it's highest point. As soon as we got back it was time to head to our next resort, <a href="http://www.natararesort.com">Na Tara</a>, also on the east side of the island and right along the ocean with a beautiful view. We finally got to utilize our bathing suits and sat in the infinity pool that practically flowed into the ocean.<br><br>

Day 14<br>
Watched the sunrise over the ocean, I've never seen water shine so pink! The area we're staying is very isolated, but we chased down another waterfall, Than Mayom, about a three mile walk up the main road. We each paid 200 baht ($6) to the ranger station and as we trekked along the river the owners dog followed; I think she wanted to make sure we made it there safe. The heat and humidity during the walk back made it unbearable to be anywhere other than the pool, which happened to have four little puppies running around. We spent a lot of time here with them.<br><br>

Day 15<br>
I had booked tickets for us to fly back to Bangkok in the evening, but we were surprisingly so bored on Koh Chang that we checked out early, hopped on the ferry to Trat and took a very fast taxi in order to arrive to the smallest outdoor airport I've ever passed through. Jen was willing to pay the $62 upgrade, but I simply asked if there was any room on the flight that was ten minutes from takeoff and the lovely lady fully obliged. We got to our hotel by 3pm, squeezed in our last Thai massages (will be greatly missed) and passed out early in order to be up for our shuttle home at 3:30am.<br><br>

Day 6<br>
Woke up bright and early after 9hrs of sleep. Wandered around inside Old Chiang Mai, it is laid out as a square and has a moat around the city, it's quite large, which can be complicated if you want to get out on foot. There are 12 foot bridges, but no crosswalks and A LOT of scooters/cars. If you are traveling by vehicle there are only 5 bridges you can cross. At one point I hailed my first songthaew (a multi-passenger pick-up truck used as a shared taxi, cheaper than a tuk tuk if you are going to a specific landmark. It's used for passengers traveling in roughly the same direction and may stop along the route to pick up other passengers headed the same way) and bartered from 150 baht down to 50 (less than $2!) for both Jen and I. These rides will only take you well-known places and we were headed to the train station so I wanted to have the experience at least once. We purchased tickets back to Bangkok for $21 each then walked around for miles and finally hailed a tuk tuk to the outdoor Saturday Market. The market was massive, my favorite part was obviously the food, constantly stopping in awe of all the neat and different cuisine. Blind musicians played every few feet down the middle of the market, we thought that was really wonderful.<br><br>

Day 7<br>
Had breakfast at our boutique, Sathu, dropped our laundry off for cleaning (48 baht = $1.45), walked through an indoor market and meandered around the city checking out all the Wats. There are so many here in Chiang Mai and it's been a treat to see all of the monks walking around in their orange robes, we learned the color comes from a natural vegetable dye found in the jungle from roots or trees. In NE Thailand they use heartwood from the jackfruit tree. They also never wear shoes. Soon after we got 180 baht ($6) Thai massages at Saija, the BEST massage I've ever had might I add. During which I had an overwhelming feeling that my passport was no longer in my possession. And it wasn't. We tracked it down at the train station where we had bought tickets the day before (and the annoyed woman helping us forgot to give it back after scanning it), queue the biggest sense of relief in my life. We hit two more outdoor markets, where the merchants were bartering FOR Jen without Jen even hesitating to pay what they asked for, it was hilarious to watch. I've had NO problems bartering, it's natural here and you don't go anywhere without seeing it. It's actually been quite fun, they barter back with a smile on their face. On the walk back to the hotel we tried Thai whiskey (yuck!), picked up our laundry, ate half our dinner at a place where we saw rats and curled up to Thai TV in our adorable hotel where each room is named after a Thai flower with a cute description drawn on chalkboard next to each door. Ours was Bua Tong, similar to a sunflower. <br><br>

Day 8<br>
Up, ready and on the road before the sun came up as we had engagements with feeding and bathing ELEPHANTS. The sanctuary we initially wanted to visit that we'd heard nothing but great things about from others was sold out, so Ritthichai (our cooking instructor) hooked us up with Baan Chang Elephant Park; everyone here is so nice and willingly helpful. The drive into the country was lush and beautiful and once we arrived we went straight to feeding. The elephants here were smaller, Asian elephants, with only one finger on the end of their trunks and mostly female. They ate sugar cane and bananas, skin on and by the bushel. There were at least 20 to be fed and one of their ankles were chained to the ground with some leeway to protect the guests, as well as each other from fighting. The feeding was incredible, we were allowed to pet, hug and take pictures with them. Cham Poo was the elephant I felt an immediate connection with so naturally I spent a lot of time with her. Afterward they taught us commands for getting on/riding the elephants, I opted to not ride as throughout my trip to Baan Chang I found their practices inhumane and quite sad. I laid out on bamboo hammocks in the perfect shade surrounded by acres of undisrupted land and once the group made it back, they bathed the animals. Jen actually got in the water and swam around with the elephants, it was really quite amazing how gentle and obedient these large wonderful creatures are. They fed us lunch and dropped us back off at our boutique. This was our last night in Northern Thailand so we wandered around the last corner of Old Chiang Mai that we hadn't explored yet. I bet you can guess where it landed us...with another Thai massage. ;)<br><br>

Day 9<br>
Last day in Chiang Mai, feels like perfect timing since we've just about figured out and explored nearly the entirety of Chiang Mai. It's been fun to recognize and know where we are sans map. I cannot stress how bad the exhaust is here, Jen and I felt a consistent high every time we stepped onto a busy street. My throat has been very sore and I've never been more excited for my lungs to get away from a busy city. It's bittersweet. A few good, bad and weird things I'll take away from this city: 1) All the black and white cats have mustaches! Not even kidding, we saw over a dozen and all except one had a little black mustache on their cute white faces 2) The power in all of our hotel rooms (including Japan) had to have the room key plugged into a socket before any of the electricity worked 3) In the last two boutiques we stayed, the shower was completely open in the bathroom and sprayed almost directly above the toilet 4) The gas prices are just under $1 per L 5) Everywhere we went we'd hear terrible remakes of adult contemporary music.<br><br>

Day 10<br>
Took the overnight train to Bangkok, where they give you a towel as a blanket and crank the a/c full blast, we arrived as icicles and on veryyy little sleep at 7am. From the train we took an underground subway to a bus to a ferry to a taxi to our resort on the island of Koh Chang. 28hr journey from start to finish. We ate dinner at the resort and promised each other to never do what we just did again.<br><br>

Day 1<br>
Headed to the airport bright and early. Drank ridiculously overpriced $16 mimosas to kill some time before our flight to Japan. Watched four movies on the 11 hour flight and sewed my jacket that I noticed had ripped going through security. Arrived at Narita and waited for the flight to Bangkok that was overbooked due to another plane transferring 300 passengers-- we didn't make it on--ahhh the beauty of flying standby. Looked online for a hotel for 3 hours, even chanced hopping on a random shuttle bus and asking our best bet hotel with 800 rooms for availability, but everything within proximity of the airport was full. Paid $182 USD for a cab to take us to a hotel 50km (that's 31 miles) away in Chiba. We had bunk beds.<br><br>

Day 2<br>
Woke up to unusual snow in Tokyo (10km out of) and watched from the window as it relentlessly fell until noon. Extended our checkout and scrutinized Japanese television then walked to the train station where we paid only $8/each for a ticket and got to the airport in about an hour. Jen and I not only made it onto our plane, but were seated in first class, it was dreamy!<br><br>

Day 3<br>
Landed in Bangkok just after midnight. The humidity when exiting the airplane was intense, like something I'd never felt before. We tried booking a hotel in Narita, but the wi-fi was down at the airport so we snagged a shuttle and headed to the hotel I had originally sought out mainly due to the sexual innuendo of the hotels' name: <i>Ploy Khumthong</i> ::insert giggle:: Took a nap and woke up to book our next flight to Chiang Mai. Had a delicious omelette breakfast with adorable smiley face toast and checked out. Flew one hour on Bangkok Air to Chiang Mai and hailed a <a href="http://en.wikipedia.org/wiki/Auto_rickshaw">tuk tuk</a> (3-wheeled open taxi) to a b&b I had initially found online and appreciated was owned by gay westerners. Noland (the owner) came to our room to introduce himself and answered most of our questions. He showed us a small outdoor kitchen across the street from our hotel and I got delicious vegetable fried rice made to order for 35 baht (roughly $1). We walked about a mile to a mall we were told to check out, things are very different here in Thailand. Ate two mango with sticky rice and Thai iced tea macaroons, the waitress called me princess. We left the six story mall and walked along the busy highway called <a href="http://www.travelfish.org/blogs/thailand/2012/04/26/chiang-mais-chic-nimmanhemin/">Nimmanhemin</a> aka Nimman, laced with a lot of small boutiques, where we stopped at a very cute spa. This was my first Thai massage and was unlike anything I'd ever experienced. You change into loose clothing that are essentially scrubs and the 60-minute massage entails more yoga-like stretching and deep rubs with rhythmic pressure, for a majority of which your therapist is sitting either on you or on the table. After I opted for a manicure as well, all for 500 baht (approximately $15). We walked back to the hotel and ate dinner at the owners restaurant next door, ordering his go-to dish: the Noland Same Same, it was yummy! Hit the hay.<br><br>

Day 4<br>
Woke up at <a href="http://www.santitham.com/">Santitham</a> and had a delicious traditional Pad Thai breakfast. Walked around Northwest Chiang Mai and tried getting my last 2 travel shots, but had a difficult time communicating with the hospital staff. The waiting rooms were the most colorful pastel and everyone looked happy and well taken care of. We walked back to the hotel and chatted about the islands with a fellow who was on his 15th trip to Thailand from North Carolina. Took a 120 Baht ($4) tuk tuk across town to the Southeast, where we checked into the scummiest "guest house" which was clearly a hostel; the internet can be very deceiving. We decided to walk around Old Town Ciang Mai and look at future rooms before booking. Found and paid for two boutiques to get us through the weekend. Had my first scare with a not-very-nice stray dog following us. Decided to walk to dinner at the <a href="http://www.theriversidechiangmai.com/">Riverside Restaurant</a>, where Noland had made us boat dinner reservations. Stopped at a few Wats on the way (temples are Everywhere!) and walked along Thaphae Gate which reminded me of Las Vegas Blvd. Stopped in for a quick 100 Baht ($3) 30 minute hand reflexology on the way--no appointments are ever needed. At 7pm we boarded the boat, ordered food and took off onto the water. It was beautiful and the weather was perfect. Bats skimmed the water around our boat and we went under quite a few bridges, a very lovely lady date. Took a tuk tuk back to the hostel and passed out.<br><br>

Day 5<br>
I arranged an all day 7 course cooking class for Jen and I. Ritthichai (pronounced Richy) picked us + 6 others up and we headed to the market. He taught us a lot about rice, vegetables they use for cooking and tofu. We picked our meals, gathered the ingredients and headed to the countryside where upon arrival we scoped out the garden and picked fresh herbs for our dishes. We learned a lot about traditional Thai cooking, received a certificate and cook book. This was my favorite experience thus far. At 3pm we headed back to the city and while crossing a very busy intersection, a college-aged girl on a scooter bolted out in front of our van, actually sliding right under us...the van ran over her scooter and her arm. We were all very worried as Ritthichai jumped out of the van to make sure she wasn't badly injured. Since insurance isn't a thing here, it took less than two minutes before he hopped back into the truck with a smile on his face, letting us all know she was okay. This was the most intense part of our trip thus far. We checked into our boutique in Southeast Old Town Chiang Mai and wandered around until we saw 180 baht ($6) foot massages. On the walk back to the hotel we stopped at a restaurant that had a giant sign for pizza, I couldn't resist. This was the funniest part of our trip thus far because one of the waiters actually took his scooter down the street to pick up a pizza and rode it back. We were sitting outside, watching him pull up and transfer the pizza from box to plate. I laughed for a good 20 minutes then exhaustedly passed out and caught up on missed Zzz's.<br><br>

Finding a good textured, well-constructed, superb tasting <i>vegetarian</i> hot dog doesn't come easy, but when I find those hidden gems out there, I relish every last one of 'em. [Pun intended!]

One of the very best hot dogs I've had the pleasure of ingesting was in cute little Old Town nestled inside Orange, California. <a href="http://linxdogs.com/">LinX</a> had me at pretzel bun and really won me over with all of their interesting housemade condiments.
<br><br>
Jumping all over their vegan dog deluxe on a pretzel bun with grilled jalapeños and onions, I had a really hard time deciding which sauces to try, so I opted for a few while salivating over them all: honey BBQ, lemon aioli and "trinity" (ketchup/mayo/mustard)...all of which paired well with the dog and implemented as perfect dipping sauces for the delicious Belgian frites!

Also notable: they do burritos. Yep, get your bad boys wrapped in a flour tortilla with all the Mexican fixins. <br><br>

</small>The crunchy yet crumbling texture of these cauliflower florets is perfection.

<b>What you will need:</b>
<br><br>
1 head of cauliflower <br>
3 cloves of garlic <br>
Juice from half a lemon <br>
Olive oil <br>
Salt & pepper <br><br>
<b>Directions:</b>
<br><br>
1. Preheat oven to 400°(F). Thinly slice garlic and sauté in olive oil on medium, until warm. Cut cauliflower into florets and toss onto cookie sheet. Pour garlic over cauliflower and drizzle a little extra olive oil. Squeeze lemon juice over the top and sprinkle salt & pepper to taste. <br><br>
2. Bake uncovered for 35 minutes, or until tops are lightly browned. Stir florets 20 minutes into baking for even cooking. Test with a fork for desired doneness. Fork should be able to easily pierce the cauliflower.
<br><br>

Not to mention some brilliant nut put a marshmallow at the bottom of my vegan waffle cone once, commence non-leakage (hooray)!! <br><br>
They also carry baked goods, small snacks and savory pastries that aren't half bad themselves. I usually get a sundae of sorts, though their ice cream is typically too sweet for my liking (and a bit pricey), so I'm usually having a <i>fierce</i> craving for super sugary treats when I come here.

Their online menu looked very clean and well put together... actually, mindblowingly awesome! so I wouldn't have expected this place to be as dingy as it was once we arrived. It was your regular hole in the wall chinese establishment and the menu was extensive, SO MUCH TO CHOOSE FROM, which I often don't like. It was overwhelming, so instead of dabbling in a little bit of everything, I just stuck to their manageable-size sushi list.

First and foremost, their yellowtail nigiri was uncanny to the real thing, I was shocked! It was a little salty, but the texture was on point and it looked so much like the real thing. Looking back that was probably all I should have ordered. The tempura was yummy, however their "salmon" tasted like Field Roast and all the sushi rolls were stuffed with a type of "fish-salad", which were all...meh.

Glad to have tried it once, but a 30 min drive might be pushing a trip back.

Though I feel like <a href="http://www.backtoedenbakery.com/">Back To Eden Bakery</a> is most talked about around these vegan-prominent parts, the new(ish) and growing <a href="http://www.petuniaspiesandpastries.com/">Petunia's Pies and Pastries</a> gives them a run for their money, no doubt. Located downtown with dreamy pastel walls, exposed brick, a fancy feel and fresh flower + candle centerpieces, I would like nothing more than to live here.

I'm not a huge sweets fan, but when it comes to ice cream, let me have at it! My last visit to Petunia's I discovered their build-your-own-sundae menu (Brûléed banana split, yes please!) and I definitely built my dream sundae...then devoured it. <br><br>

It's perfect for what it is, from the decor to the seating and the menu... I loved it all. <a href="http://24thandmeatballs.com/"/>24th & Meatballs</a> is an ever so obvious meatball-focused restaurant. Everything on the mix and match menu including pasta and salads are priced under $10. <br><br>
Catering to all sorts of diets, I enjoyed the list of options for your own perfect meatball creation. You've got <b>The Classic</b> stuffed with beef, veal, pork and basil. <b>The Pork</b> including chilis, cheese and spices. <b>The Chicken</b> parmesan and thyme (this one's gluten-free!). A special <b>"ball of the day"</b> that changes and <b>The Vegan</b> to which all I've gathered is it "contains nuts".<br><br>
My go-to is The Vegan slider with hazelnut arugula pesto sauce. Tiny little guy and on top of being cute as hell to photograph, the meatball was tasty and not dry at all. The salads could use a little sprucing, not so much to write home about. <br><br>
They serve $1 kool-aid which was pretty cool, but I always opt for the ginger lemonade!

This is <a href="http://saltandstraw.com/">Salt & Straw</a>, probably the most well-known ice cream shop in Portland, Oregon. Though I prefer gelato myself, I do give them an A for effort with their ever-changing and mind-boggling flavors of the Pacific Northwest, handmade in small batches and using local, sustainable and organic ingredients; providing the richest ice cream this mouth has ever laid tongue on. Here we have strawberry cilantro lime cheesecake!<br><br>

This pretty swanky sky-high lounge and restaurant is located on the rooftop of The Nines Hotel in downtown Portland with incredible views of the city. The theme is Asian fusion and what originally drew me to this place was the delectable vegan menu, but what made this experience even sweeter was walking up the hallway (and even their bathroom!) reminiscent of my favorite ride, Space Mountain. <br><br>

<br><br>
A lot of my vegan friends have recommended this spot and now I see why. I've always been kind of weirded out by the circular conveyer belt that goes round and round until you decide something looks appetizing enough to snag up. It took some coercing on my friends' part to get me to come here, but with promise of being able to order off menu my mind was put at ease. I was blown away by how good their veggie rolls actually were. This isn't somewhere I'd particularly want to eat fish from (cheap and dirty), but I was into their flat rate plate pricing for everything, $1-4 per plate depending on color. It's awesome when you're on a budget or want to look like a conquistador at the end of your meal with a mile high stack of plates that only cost you $20-30.

All vegan/vegetarian and full of deliciousness, this cafe was right up my alley. From an adorable menu with cute names for entrees, such as the "hot nest", to the pure aesthetics of the food that came out, this spot is top notch and by far one of my favorite go-to's for brunch in this city.

Tiger! Before leaving San Diego, it was vital that I tried a favorite brewery amongst natives, <a href="http://tigertigertavern.blogspot.com/">Tiger! Tiger!</a>. Not the most vegetarian friendly, but I took the opportunity to get brunch on a lovely Sunday.

The biscuits and gravy had to have costed all of $2 to make and there was no fake meat, just a melted cream cheese sauce over two flaky pillsbury-looking biscuits. HOWEVER the potatoes were amazinnngggg. The prices were decent, the housemade lemonade was yummy and I loved loved that they let me "taste" the St. Louis Framboise beer that they had on tap... it was delicious. Take note that they have some awesome specials on beers throughout the week!

Craving diner-ish food and not too expensive for a quick yet sit down meal, <a href="http://www.miloscitycafe.com/Pages/default.aspx">Milo's City Cafe</a> popped up and this place really surpassed all of my expectations.

Not sure why I was under the impression after glancing over their website and skimming reviews that this was an older diner, nothing to really write home about, but boy was I wrong. On top of the spectacular food, almost every table was full while we dined in, but generally no wait...on a SATURDAY. Talk about awesome and practically inconceivable.

I got the smoked salmon benedict (the hollandaise sauce was what dreams are made of), fresh fruit & potatoes. I had no trouble picking out a few items I'd like to try when I return.

I honestly couldn't have picked a better week to visit, there wasn't a drop of rain and the weather was simply put: incredible.
