In nature of today, Cinco De Mayo, I wanted to post a delicious and fresh guacamole recipe that is not only tasty, but festive! Olé!
What you will need:
1 ripe avocado
1 tbsp onion, diced
1 small vine-ripe tomato, diced
1 jalapeno chili, seeded & chopped
1 garlic clove, minced
1/4 tsp ground cumin
1 tbsp fresh lime or lemon juice
2 tsp extra virgin olive oil
2 tbsp cilantro leaves, chopped
salt & pepper to taste
Simple directions:
1. Take the avocado cut across the center to split in halves.
2. Take the pit out and spoon the avocado out of shell.
3. Mash avocado in a bowl with lime/lemon juice.
4. Fold in all the other ingredients and serve with chips.
(I even like to put the guacamole back into the shell)
Serves:
One to two people. Definitely triple recipe if making for a larger party.

ReplyDeleteoh check you out! i totally cheat on the ingredients and just add a scoop of salsa. i also add salt and pepper and lemon juice...but now not only do i totally want some guacamole, i kind of want to make a non cheater version. ;)

ReplyDeleteA scoop of salsa would be a great idea to some mashed up avocados. super simple.
I looooooove avocados too! I like to just spoon them out of the shell with a little salt. And on sandwiches, omg!
