After living in San Diego for over three years, I finally visited Mexico for the first time in the existence of Ainsley. Luckily I had my most adventurous boys, Eddy and Isaiah, to drive down with...

lightlife #2
#2: Smart Ground - Original
One of my favorite products by lightlife are these Original Smart Ground meat crumbles... I use them for tacos, spaghetti, sloppy joes and my favorite dip!
The other night we had NACHOS!

Put some chips on a pan and smother 'em with toppings! We chose black olives, jalapenos and cheese. Bake 'em at 350 degrees til the cheese melts, about 10 minutes. Cook the meat crumbles the same way you would tacos and pour 'em over the top. Don't forget a side of salsa and/or beans, guacamole, sour cream to dip!

This wasn't even all of the meat crumbles! I took what was left over and made two tacos for breakfast the next morning.
What I liked: I love how versatile these puppies are! Like I said above, I can use them for tacos, spaghetti, anything that calls for ground hamburger. Plus it's my favorite lightlife product.
What I disliked: Umm, nothing! Maybe that I never have enough in my fridge ;)

taco night
Fresh & Easy carries these awesome jalapeño and cilantro bad boys, so last night we had tacos!

I love all sorts of veggie crumbles for different things, but for taco meat, I really like using the morning star meat crumbles. I just use regular taco seasoning, as it is vegetarian.

Soyrizo Tacos
Mexican food is almost a daily occurrence in our household. We're very lucky to have some of the best mexican food around us, seeing as we are twenty minutes from the border.
Jon and I have recently been hooked on Trader Joe's soyrizo. It's so good to use as the meat for tacos, mixed in macaroni or making vegan hamburger helper!

Flore
What's a day in LA without Flore?
Flore is an organic, all vegan, deli/restaurant in Silver Lake.
I always get the same thing... the Eastsider Tacos, made with seitan and the best cashew cheese ever!
