#3 - Smart Cutlets - Spicy Sweet & Sour

This was my first time trying these cutlets, but I could tell right away that they were the same original smart cutlets, just marinating in a spicy sweet and sour sauce.

I love sweet and sour sauce when I go out for chinese, so I grabbed some brown rice and frozen veggies to try and make it the way my favorite restaurants do.

Veggies: Put a tablespoon of vegetable oil in large skillet and heat the veggies on medium high heat for 6-8 minutes.

Cutlets: While the veggies sautee, start cooking the cutlets in a small skillet lightly coated with vegetable oil on medium heat. These don't need to cook as long, but I would give them about 5 minutes, flipping once or twice.

(side note: There will be leftover sauce in the bag of which the cutlets were marinating. Save that and pour it over the veggies when they are done cooking. The sauce only needs a second to heat up.)

When the veggies and cutlets are close to being done, throw a package of brown rice in the microwave. These babies only take 3 minutes to cook and I LOVE them (also try the Thai Jasmine Rice from Trader Joes, yum!).

Pour everything on top of the rice and voila!

What I Liked: The sauce was pretty darn good all mixed up with the rice and cutlets.

What I Disliked: The frozen veggies were awful. I recommend making this dish with fresh veggies, I just saw this bag in the frozen aisle and thought that it would be fun.

Thanks again, lightlife!
