Foodie Friday: Soda Cupcakes

A bit overdue, but for my birthday this year I wanted Funfetti cupcakes, and to be experimental, made with diet soda in place of eggs, oil and water. Not that I care, but it's like half the calories! Jon made the cupcakes (and took the pictures) and they actually turned out really good! I was going to have him write this entry, but after 2 months of waiting... I'm going to take you through it step by step myself.



What you will need:

Cupcake liners
Basic cake mix
1 can of diet soda
1 tub of frosting (or get fancy and make homemade frosting!)
Sprinkles of your choice

*Make sure to use clear sodas for white cakes and dark sodas for dark cakes. Also, only use diet soda! I was a little hesitant at this because I can't stand the taste of diet sodas, but regular soda has too much sugar (trust me, your cake mix has plenty!) and you actually can't tell once cooked!



Directions:

1. Preheat your oven to 350 degrees. Line cupcake pan with paper cupcake liners.



2. Blend cake mix and diet soda in large bowl, you can use an electric mixer or whisk by hand.



3. Fill cupcake liners 3/4 of the way with cake mix.





4. Bake for 18-22 minutes (make sure cupcakes are fully cooked by inserting toothpick, it should come out clean).



5. Frost and sprinkle these puppies.

Independence Day: taking a turn for the worst

Independence Day started off well enough: worked (who says no to time and a half?!), took a good nap, picked the boy up from work and headed to Fiesta Island for festivities.









Fiesta Island is big and it was crowded, but since I knew the whereabouts of where SeaWorld's fireworks take place we luckily got to sit right under them, on the edge of the water. The show was great and we managed to see 4 other shows from where we were sitting!





As we were walking back to the car we noticed a fight happening. Since this is a large island with only a one way lane of traffic there were no police around. The fight turned into a full on brawl including a bunch of people and weapons. Innocent bystanders were in their cars inching into the line of other backed up traffic trying to get out, honking repeatedly and calling 911.

Unfortunately my car was in the line of fire and hit with two large rocks. The first hit shattered my driver side mirror and as I turned around to see how close they were to my vehicle another hit the top of my car. I saw who threw it and as they jumped into their car to speed off on the dirt shoulder, I grabbed the plate number. 911 was flooding with calls, but eventually I gave my statement over the phone along with the plate number. Luckily the cops got word and nabbed the car before they could get off the island. An hour later, we finally reached the end of the island where the police were. A jeep with a busted back window was also in the vicinity of the accident and waiting. The cop took our statements and information again, made us identify the person who did it (scary!) and proceeded to tell us that since the rocks were thrown from the individual and not physically hit with the car that their insurance would not cover the damage.

I have the bare minimum of insurance so it looks like I'll be paying for this out of pocket. My only option thereafter is to take them to small claims court, which I'm not entirely sure is worth it. It amazes me that someone could do something like this, get caught and leave scot-free. 'MERICA!

Has anyone ever changed the complete side mirror on a vehicle? If so, I would appreciate any input.

Foodie Friday: Acai

I know I've talked about acai bowls and smoothies a few times here, but I cannot stress how super duper healthy these are (I'm talkin three times the antioxidants than blueberries) and tasty to boot! Jon and I are borderline obsessed with acai bowls and get them at least three times per week; they immediately give me energy and have me feeling good all day. I'm always suggesting that people try them and I'll happily introduce anyone who has yet to give them a whirl :)

After doing some research I decided to answer some FAQ that I get about acai:

What are acai berries? Also known as "Nature's Super Food" and only found in the Amazon rainforest, these purple berries are full of omega fats, amino acids, electrolytes, fiber, calcium, protein, vitamins A, B1 and E and contain more antioxidants than cranberries, raspberries, blackberries, strawberries, or blueberries!

What are some of the health benefits of acai? Aside from being just a healthy, well-balanced fruit, acai can also help with digestive problems, skin irritation, sexual dysfunction, anti-aging and even insomnia. Acai berry are also naturally low in sugar which makes it safe for diabetics.

Where are acai berries from? Central and South America.

Where can I buy acai berries? As far as I've seen and read, you cannot buy these berries at your local market or grocery stores, but you can buy juice, blends, supplements and frozen packets from Sambazon.

But why can't I find them in the produce section? Because acai berries spoil very quickly after being picked, they are rarely sold outside production areas as whole fruit. More often than not, they are freeze-dried and powdered.
