Thumbprint Cookies

Snagged this recipe from Danielle over a year ago and never shared my experience here. I had a pretty difficult time because the dough would not stick together properly and unfortunately, after baking, there were a lot of cracks in my cookies. BUT I would definitely try making these again because although crumbly, they were mighty tasty!

What you will need:

2 1/3 cups flour
1/4 cup sugar
1 1/2 sticks butter (softened)
1 egg yolk
1 teaspoon vanilla
strawberry preserves (or any flavor you'd like)


1. Mix flour and sugar together in one bowl

2. In another bowl, electrically mix butter, yolk, vanilla

3. Add wet to dry mix, and mix by hand for about 15 minutes
*add 1/4 stick of butter if mixing by hand does not help turn into solid ball of dough

4. Mix together until it becomes one ball of dough (if it's too soft you can put in the fridge in wax paper)

5. Take one tablespoon and roll into a ball and make a thumbprint in middle of the ball

6. Bake on un-greased pan in oven at 350degrees for 15-20 minutes, until they are golden

7. Take them out and put preserves in the thumbprint

8. Put them back into the oven and bake for an additional 10-15 minutes

9. Once the thumbprint cookies have cooled, roll in sugar for added decoration

  1. I love thumbprint cookies! I made them once with lots of oats but it's been forever. I guess I'll have to try these :)

  2. You can add another egg to it, and the consistency will be stickier and hold together better when you bake them.
    Cute, though. I remember these from when I was a kid.

  3. Whenever I see thumbprint cookies, I always want to go out and buy the Knott's cookies.

    They're so good. I always loved them all minus the strawberry which is good but not as good as the rest.

    I'll have to try and make my own!

  5. I tried this recipe too, this past christmas. I am glad to hear that mine weren't the only ones that turned out crumbly. They were very tasty though!

    What flavour preserves did you use?

  8. Beca, noted. I tried a few different things to make it stick together better, but I never tried using an extra egg!

    Megan, I've never seen those, they look tasty. Especially the Raspberry! Where do you find them?

    Danielle, I used strawberry preserves this time. They were really good.

  9. They have them all over! I've gotten them at like 7-11, Safeway/Vons, liquor stores, rite aid / cvs / walgreens, etc.

    The raspberry ones are good! Hope you find them one day.
